APPLE CAKE
Cake:
2 cups 500 ml granulated sugar
1 1/2 cups 375 ml oil
3 3 eggs
3 cups 750 ml all purpose, flour
1 tsp 5 ml baking soda
1 tsp 5 ml baking powder
1 tsp 5 ml salt
2 tsp 10 ml ground cinnamon
¼ tsp 1 ml cloves
¼ tsp 1 ml nutmeg, ground
3 cups 750 ml cored, peeled, diced apples
1 tsp 5 ml vanilla extract
1 cup 250 ml raisins, crasins, chopped dried fig or pecans (optional)
Syrup:
4 oz 120 g butter
1 cup 250 ml packed brown sugar
1/3 cup 60 ml milk
Cream the sugar and the eggs together in a mixer, add the eggs one at a time continue to beat until very light and fluffy.
Stir together the flour, baking soda, baking powder, salt and seasonings. Add to the egg mixture along with the apples alternating in 1/3rd intervals.
Stir in the vanilla and optional dried fruit of nuts.
Fold into 9″ x 13″ (23 cm x 32 cm) oblong cake pan or a 9” (23 cm) springform pan. Bake at 350°F (180°C) for 45 minutes or until inserted toothpick comes out clean.
While the cake bake, combine the syrup ingredients in a small saucepan, bring to a boil , reduce to simmer and simmer for 10 minutes.
Once the cake is baked and while it is still hot poke it with holes with the toothpick, skewer, or roast fork. Pour the hot sauce over the cake to cover it, allow to cool to room temperature before serving.
